Grilled Polenta Recipes

Here are two delicious recipes for grilled polenta. When polenta is grilled, it develops a crunchy, crispy outside that compliments the buttery, creamy inside.

Prepare a batch of regular polenta and then allow it to cool in a loaf pan. Slice it and then grill it. It makes a tasty accompaniment for poultry and chicken dishes. It is also great with fish and braised meats.

Grilled Polenta Recipe No. 1

Ingredients:
4-tablespoon polenta
250 ml boiling water
Pinch of salt
Drizzle of olive oil

Directions:
Using a saucepan on medium heat, add the polenta and the water. Stir constantly with a wooden spoon. Remove pan from heat after about five minutes or more as the mixture thickens. Remove the polenta from heat when it is ready and pour it into a foil dish. Allow it to settle evenly. After cooling a bit, drizzle the olive oil over the dish.

Allow this to cool and then place it in the refrigerator until the mix is solid. You can gently grill the polenta until slightly crispy on top by placing the foil dish under your grill. Turn and grill the opposite side.

Cut into slices or serve whole. This dish is a nice replacement for rice or potatoes. It is cheap and delicious. You can also heat the polenta while using a saucepan. With boiling water and a pinch of salt. Remember to stir to thicken and then serve.

Grilled Polenta Slices - Recipe No. 2

Ingredients:
4-cups cooked polenta
2-Tablespoons extra virgin olive oil

Preparation:
After preparing a batch of polenta, pour it while warm into a glass loaf pan. Smooth the top, cover it and place it in the refrigerator for a few hours or overnight to set. Turn the molded polenta loaf from the pan onto a cutting board. Cut the loaf into ½-inch slices and then brush both sides with olive oil.

Heat your grill to a medium-high setting while taking care to set properly whether setting a gas oven or an electric grill as they will vary in temperature control. Place each slice diagonally across the grill. Allow it to cook until dark brown grill marks appear. When your is good and hot, this should take about 10 minutes.

Do not move the slices around, since this will disturb the browning process and do not overcrowd your grill while cooking. Rather you should work in batches. Flip and grill the opposite side until the grill marks appear, again for another 10 minutes. Serve the polenta slices hot.
