Mushroom Soup Recipes

Our Best of Mushroom Soup Recipes (Gobova Juha) is for you if you are searching for a rich soup dish that's thick with the goodness of wild mushrooms from the forests of Slovenia.

You are not going to be disappointed with this culinary highlight. The spices of marjoram, the substance from the potatoes and the aroma of the wine or wine vinegar added to the sour cream garnish is going to have your taste buds dancing with delight.

Ingredients

* 1 lb of wild mushrooms cut into chunks, if possible bolete or a similar kind of meaty mushrooms or a combination of half a pound of mushrooms bought from a store and three tablespoons of crumbled dried mushrooms which have been soaked in warm milk for a minimum of twenty minutes (this liquid may be kept for later use in another recipe).
* 4 to 5 tablespoons of butter
* 1 finely chopped medium onion
* 1 tablespoon flour
* 1/2 teaspoon minced garlic
* 2 medium potatoes, peeled and cut into small cubes
* 2 big cups warm water

* 1 teaspoon of minced garlic

* 2 bay leaves
* 1/2 teaspoon freshly ground black pepper
* pinch of marjoram (or oregano if preferred)
* 1 cup semi-dry white wine (if possible a traminec or true rizling) or 1 tablespoon of wine vinegar
* salt to taste

For the garnish - 2 tablespoons of minced parsley and a few dollops of sour cream

Method
Melt the butter in a large saucepan and fry the onions until transparent. Stir in the flour along with 1/2 teaspoon garlic and cook until frothy.

This should take around thirty seconds. Stir in the mushrooms (whatever kind you have opted for) and add the water, bay leave, pepper, and lastly add the marjoram after crumbling it between your palms.

Simmer and cook on a low heat for ten minutes, then stir in another 1/2 teaspoon of garlic and continue with the cooking for a further five minutes until the potatoes are tender, remembering to stir the dish at frequent intervals.

The wine or wine vinegar can then be added along with salt to taste. Serve by ladling the soup into small bowls and garnishing with a sprinkle of parsley and a dollop of sour cream at the centre.
