Polenta Cakes: Baked Polenta Recipes
Located here are some polenta cakes. You won't normally find this kind of recipes in Slovenia, but I wanted to add them into the recipe section anyway to display just how versatile polenta really is.
Interesting fact: During the second world war, the population of Ljubljana ate polenta cuts topped with marmalade. These cuts were called "vojna torta" which means "war cake".
Lemon Polenta Cake RecipeThis cake is delicious and light and can be served on it's own or with fresh fruits such as blueberries, raspberries, or strawberries. Ingredients: 2 tablespoons of lemon juice 85g of polenta 2 large beaten eggs The zest of 2 large lemons 2 large lemons 175g of butter 150g of ground almonds Half teaspoon of baking powder 175g of caster sugar
Preparation: You'll need a 7cm greased baking tin and line with greased-proof paper. Be sure to pre-heat oven to 180 degrees C or gas mark 4. Directions: First, cream butter until light and fluffyBegin gradually beating the two eggs.Place almonds into mixtureAdd baking powder, lemon zest, juice, and the polentaBlend thoroughly Chocolate Polenta Cake Recipe and Directions: 2 eggs, beaten ½ teaspoon almond essence 80 g fine yellow polenta 30g cocoa powder 150g ground almonds 160g caster sugar 160g butter ½ teaspoon baking powder Baking Instructions: 1. Set your oven at 160 degrees C or gas mark 3. 2. Line an eight-inch cake tin with baking parchment paper. 3. Mix together sugar and butter until creamy and pale. Add and stir in the cocoa powder and ground almonds. 4. Slowly beat in the eggs and fold into the polenta and baking powder. Place the mixture into the tin. 5. Place mixture into cake tin and set baking timer for 30 minutes. You can also stop baking as soon as the surface begins to crack. This recipe is best served warm with crème fraiche or ice cream.
