Stuffed Peppers Recipes

Stuffed Green, Red or Vegetarian Pepper Recipe Ideas - Slovenian Style

Stuffed Peppers Recipes are a gastronomic delight enjoyed by people in the Mediterranean and Balkan countries as well as places as far away as India, the United States, Mexico and the Middle East.

In fact, it's fair to say, they are the favorite dish of many folk all over the globe.

Stuffed Peppers are Typical Slow Cooker Recipes

Stuffed peppers recipes are more often than not prepared as slow cooker recipes and they can be served as an appetizer or side dish as well as a main course.

However, I have also mentioned a quick and easy method of preparing stuffed peppers for those who lead a hectic lifestyle and don't want to wait any longer than absolutely necessary to have their taste buds tickled.

In my stuffed peppers recipes I have included a typically Slovenian dish (known as Polnjena Paprika) which is deliciously filled with a mouthwatering mixture of ground meat, rice, herbs and spices.

Here are three of my stuffed peppers recipes for you to try, all of which can be modified to suit your personal taste preferences.

1. Polnjena Paprika/Nadevana Paprika
(Original Slovenian Stuffed Peppers)


* 8-10 large peppers
* 1000 g of mixed ground meat
* 1 tbsp of oil
* 1 small onion
* 2 finely chopped garlic cloves
* 1 egg
* 100g of rice
* salt and pepper to taste
* 1 tsp of ground sweet paprika
* 1 tomato
* 1 cup of lukewarm water

And for the sauce

2 tbsp of oil
1 tsp of sugar
2.5dl of tomato puree
1 tbsp of ground sweet paprika
3 - 4 tbsp of flour
water as necessary

Method:
1. First of all the salt and pepper should be added to the ground meat, followed by the chopped garlic, the ground sweet paprika and the egg.

2. Using a medium temperature, heat the oil in a saucepan and cook the onion for approximately 2 minutes before adding the meat mixture to the pan.

3. Cook the rice for half the required cooking time and then add it to the meat mixture and knead all of the ingredients using your fingers.

4. Make the peppers ready for stuffing by cutting the tops off and removing the seeds. The bottom of the peppers may require trimming delicately in order to allow them to stand upright. 5. Place the mixture in the peppers to the brim making sure the mixture does not flow over the sides of the bell.

6. Place one or two cups of water in a large Dutch oven pot and bring the water to the boil.

7. While the water is boiling the sauce can be prepared by heating the oil in a pan and adding the sugar during gentle heating. Add the flour, the tomato puree and the ground sweet paprika along with a little water and stir constantly and thoroughly.

8. The sauce can then be placed in the big pot containing the water and should be stirred until the right consistency is formed making sure the liquid is not too thin.9. Place the stuffed peppers in the pot adding additional water as required. Season to taste and then cover the pot and cook on a medium heat for two hours or so.

10. Serve the dish with mashed potato or bread.

For best results leave until the next day before serving when the stuffed peppers and sauce taste even better!

2. Stuffed Green Peppers Recipe - The Easy Way

As mentioned earlier, this is a recipe to make stuffed green peppers the easy way without having to use the slow cooker method of cooking.

In order to save a little time some of the ingredients can be purchased pre-prepared in jars which means this stove top dish requires no more than twenty minutes preparation time and can be left to cook to perfection in around an hour or so.

Rice is added to the sauce to create an interesting taste and texture but if you prefer the sauce to be somewhat creamier all you have to do is use two cans of tomato soup or a little extra cream instead of the tomato sauce.

Ingredients:
* 4 large green peppers
* 500 g of beef, freshly ground
* 1 large egg
* 1 medium onion, diced
* ½ cup of risotto or any other kind of rice for the filling along with ½ cup for sauce
* 1 large jar of your favorite tomato sauce
* 1 large can of diced tomatoes with basil and garlic
* Salt and pepper to taste

Method:
1. The green peppers should be washed and hollowed out removing the tops and the seeds. Mix the meat, the onion, the egg and the half cup of rice together in a bowl adding a dash of salt and pepper to taste.

2. Using your fingers knead the mixture until all of the ingredients are combined together and then place the mixture inside the peppers using a spoon. The stuffed peppers should then be placed in a Dutch oven pot.

3. Place the tomato sauce and diced tomatoes into the pot and top it up with water. (You can use the empty tomato can to measure the required amount of water if you wish). Add the other half cup of uncooked rice to the sauce at this point and stir the liquid gently. Cover with the lid and cook for approximately one hour on a medium heat.


3. Baked Vegetarian Stuffed Peppers Recipes -
So Quick and Easy Too!

Ingredients:

* 4 large red bell peppers
* ½ cup of long grain brown rice
* 3 tbsp olive oil
* 1 medium sized onion, chopped
* 1 cup of zucchini, finely chopped
* ½ cup of sunflower seed nuts
* ¼ cup of minced parsley
* 2 lighten beaten eggs
* ¼ teaspoon dried and crumbled oregano leaves
* 1 can (4oz) chopped green chilies
* ½ cup of grated sharp cheese
* Salt and black pepper to taste



Method:

1. Using 1½ cups of boiling salted water cook the rice for around 35 minutes or until tender. Drain and put to one side.

2. Cut the peppers in half and take out the white membrane and the seeds. Boil the peppers for 5 minutes in hot salted water and then place them in a shallow and lightly oiled 1½ quart baking dish.

3. Set the oven at 400F and while the oven is reaching the required temperature heat the oil in a small skillet adding the onion, the zucchini and the sunflower seeds and cook until the onion is tender.

4. Take off the heat and stir the mixture into the rice adding the parsley, the eggs, the oregano, the chilies and salt and black pepper to season.

5. Stuff the peppers with the mixture, lightly sprinkle the grated cheese on the top and bake for around 20 minutes or so with about a third of a cup of hot water in the bottom of the dish.
